Instant Pot Sprouted Pinto Bean Soup Mix

Wash and Soak and Wash - Then you are ready to make bean soup.  Yes, sprouted beans are much healthier due to the removal of the phytic acid.  But, it takes up a lot of time. And then if you want to put in veggies, there's the chopping.   

Here at Enjoy, we've done the sprouting for you.  And the chopping.  And it's all ready for your Instant Pot or slow cooker.  The night before you want to make bean soup, just put the already sprouted beans in your instant pot with 6 cups water.  Since they were dehydrated after sprouting they need to be rehydrated.  So a good soak overnight softens them up again -- but you get to skip the rinsing.  After the soak, just add the dehydrated veggies and turn your pot on.  After 35 minutes it goes to the keep warm cycle and is good there for 10 hours.  Your bean soup will be ready when you are.  

This bean soup mix is vegan.  Years ago I learned a secret to making vegetarian beans taste a little like they were cooked with bacon, and that secret is burdock root which is also very good for you.  Another ingredient in the soup mix is epazote, a Mexican and South American herb that is known to assist in digestion and reduce flatulence. 

Of course you can add bacon or pork belly to your soup, like they did where I grew up in the Appalachian mountains, where pinto bean soup was usually a staple on the back of the stove. 

For more flavor there's organically grown carrots, celery, and onion.  As well as dehydrated low oxalate greens (from Dr. Tom Cowan's garden). 

Our bean soup mixes are jarred in mason jars to reduce the use of plastic, one jar for the beans and one for the veggies and spices.n
